add text stuff here to give a history on why we chose recipes? ~~ where we got them from? how we interpreted them? how we used them? should we state the process here, also? how long did it take us to make it? and some other interesting stuff we can add to the "recipe" page. Should this page have a title??

Relleno
6-10 chiles 2 cucharadas . mantequilla o manteca de cerdo 1 1/2 cebolla finamente picada 10 hojas de aguacate a la parrilla 10 dientes de ajo asados 5 1/2 tazas de frijoles negros cocidos y puré Masa 2 tazas de manteca de cerdo 1 kg ( 8 tazas ) de masa de maíz 1tbs sal 1/2 taza de caldo de pollo Armado 15 hojas de maíz 15 hojas santas (no fue capaz de obtener) 1. ) Preparar el relleno . hidratar el Chile en 1 taza de agua caliente durante 10 minutos. Escurrir y guardar el agua. Caliente 1 cucharada de manteca en una sartén y saltear la cebolla. Blend ( procesador de alimentos ) con las hojas de aguacate y el ajo . 2. ) Mix Chile pegar con puré de frijoles ; calentar el resto de la mantequilla en una cacerola y agregue la mezcla de frijoles en constante agitación y se deja hervir a fuego lento hasta que la mezcla espese. retirar del fuego y se puso a un lado. 3. ) Para la masa , batir la manteca de cerdo durante 5 minutos hasta que estén suaves. mezclar gradualmente la masa de maíz y sal hasta que todo se mezcla juntos. Sabor debe ser ligeramente salado. 4. ) Para cáscara exterior, trazar un paño húmedo y diseñar las "hojas santas" . Extienda la masa sobre las hojas . Coloque una capa de pasta de frijol abajo . Comience enrollando tamal . Cortar un trozo de 3 cm de espesor. Colocar dentro de un pedazo de hoja de maíz y cerrarla para formar el tamal . Repetir . 5. ) Se encargará de tamales en posición vertical en una vaporera y cocine a fuego alto durante 1 hora o hasta que la masa esté firme . Retire los tamales del calor y dejar que repose durante 20 minutos antes de comer . |
Relleno
6-10 chiles 2 tbs. butter or lard 1 1/2 onions: finely chopped 10 grilled avocado leaves 10 roasted garlic cloves 5 1/2 cups cooked and mashed black beans Masa 2 cups lard 1 kg (8 cups?) corn dough 1tbs salt 1/2 cup of chicken broth Armado 15 corn husks 15 holy leaves (was not able to obtain) 1.) Prepare the relleno. hydrate the chile in 1 cup of hot water for 10 minutes. Drain and save the water. Warm 1 tb of lard in a pan and sauté the onion. Blend ( food processor) with the avocado leaves and garlic. 2.) Mix chile paste with mashed beans; warm the remaining butter in a saucepan and stir in the bean mixture constantly stirring and let it simmer over low heat until mixture thickens. remove from heat and set to the side. 3.) For the masa, beat the lard for 5 minutes until fluffy. mix gradually the mass of corn and salt until it all blends together. Taste should be slightly salty. 4.) For outside shell, lay out a damp cloth and lay out the “holy leaves”. Roll the dough out over leaves. Put a layer of bean paste down. Start rolling up tamale. Cut a slice 3 cm thick. Place inside a piece of corn husk and close it to form the tamale. Repeat. 5.) Arrange tamales upright in a steamer and cook on high for 1 hr or until the dough is firm. Remove the tamales from heat and let them sit for 20 minutes before eating. |

Masa
10 de mazorca de maíz 1kg ( 8 tazas ? ) Harina de trigo 1/2 litro ( aproximadamente 2 tazas ) de pulque 1 1/2 tazas de agua 1/2 kg ( 4cups ) de azúcar morena 1/2 cucharadita de sal Cáscara externa 12 hojas de maíz 1. ) Tomar las mazorcas de maíz y mezcle con un paño hasta obtener 1/2 taza de anteras. Ligeramente tostarlas y reservar. 2. ) Coloque la mitad de la harina en un bol , añadir el pulque . Mezclar hasta obtener una masa ligera. Cubra el recipiente con una gasa , metiendo los bordes debajo del recipiente y dejar reposar a temperatura ambiente durante 2 horas. 3. ) Hervir agua caliente en una olla y agregue el azúcar morena , retirar del fuego cuando se disuelve . Añadir sal y dejar enfriar. 4. ) Incorpore la harina restante a la masa. Formar un hueco en el centro y revuelva en las anteras Y el azúcar moreno diluida. Incorporar los ingredientes con las manos , haciendo un movimiento hacia la derecha y girando el bol. Usted debe obtener una masa de consistencia pegajosa y es de color marrón claro . Cubra la masa con un paño húmedo y dejar reposar durante la noche en un lugar fresco. 5. ) Para el montaje , retire la masa del recipiente . Formar un rectángulo de 7 cm de ancho y cortar cada 5 cm. Colocar una porción de masa en la parte más ancha de la hoja de maíz y cerca de tamal . Repetir . 6. ) Se encargará de tamales en posición vertical en una vaporera y cocine a fuego alto durante 1 hora o hasta que la masa esté firme . Retire los tamales del calor y dejar que repose durante 20 minutos antes de comer. |
Masa
10 corncob 1kg (8 cups?) wheat flour 1/2 liter (about 2 cups) of pulque 1 1/2 cups water 1/2 kg ( 4cups) brown sugar 1/2 tsp salt Outer shell 12 corn husks 1.) Take the ears of corn and toss with a cloth until you get 1/2 cup of anthers. Lightly toast them and set aside. 2.) Place half the flour in a bowl, add the pulque. Mix into a dough lightly. Cover the bowl with cheesecloth, tucking the edges underneath the bowl and let stand at room temperature for 2 hours. 3.) Boil hot water in saucepan and stir in the brown sugar, remove from heat when it is dissolved. Add salt and let cool. 4.) Stir in the remaining flour to the dough. Form a well in the center and stir in the anthers and diluted brown sugar. Incorporate the ingredients with your hands, making a movement clockwise and rotating the bowl. You must obtain a mass of sticky consistency and is light brown. Cover dough with a damp cloth and leave it to stand overnight in a cool place. 5.) For assembly, remove the dough from the bowl. Form a rectangle 7 cm wide and cut every 5 cm. Place a portion of dough into the widest part of the corn husk and close tamale. Repeat. 6.) Arrange tamales upright in a steamer and cook on high for 1 hr or until the dough is firm. Remove the tamales from heat and let them sit for 20 minutes before eating. |
